Yesterday, my bestie Holly asked me if I had a new blog post and I was like "yeah--it just isn't posted yet." Well, isn't that lame! I came across this recipe a couple weeks ago and just had to make it! I've been completely addicted to soups lately and, more specifically, homemade soups. Potato soup is one that I've been wanting to do for a while. I tried a crockpot version before this one. Unfortunately, while it tasted amazing, the second time I heated it up all of the liquid was absorbed and the soup became the consistency of mashed potatoes!
Can I just say that I have missed you guys so much!? My computer has been out of commission for almost 2 weeks now. 2 whole weeks where I haven't been able to blog! Last night we had a 9:45 pm appointment at Apple. Yes, that's how late the appointment was for real. They decided since they don't know what the heck is going on that they are going to send my computer into Apple and once it comes back it is going to be guaranteed to work!
This was one of the million recipes I made over the second weekend of our diet "reset." It was also one of the nicest. You can make this recipe on the stove with it only needing 15 min of cooking time but I needed the stove for the other recipes I was working on so I just whipped this one together in the crock-pot instead.
Ahhh, fall is in the air of our small mid-western town. With cooler temps and rainy days in the forecast, it seems like the perfect time to make use of some of our CSA favorites: leeks, delicata squash and broccoli. Combined in a light soup, these farm fresh faves are the hit of any rainy day menu.
