chocolate chip and pecan banana bread
Here I am posting things late again. Sigh! I had a good reason though as I got distracted by Valentine's Day!! Despite being a week late in posting this I still wanted to wrap up our diet "reset." Overall I would say that it was very successful! Adam lost about 5 lbs over the 30 days and several inches combined around his body in size. We also feel a lot better in general!
Well we made it through week 3!! There really is less than a week to go because it's only a 30 day trial. I thought in the beginning that it would never be over…but here we are on the verge of adding back in foods starting mid-week. I have a feeling that next week's post is going to be more about the addition of foods than a 4 week recap. It should be more interesting that way though!
This was one of the million recipes I made over the second weekend of our diet "reset." It was also one of the nicest. You can make this recipe on the stove with it only needing 15 min of cooking time but I needed the stove for the other recipes I was working on so I just whipped this one together in the crock-pot instead.

Hey everyone! Adam and I are going to be switching it up a bit for the next month or so. Adam recently read Your Personal Paleo Code: The 3-Step Plan to Lose Weight, Reverse Disease, and Stay Fit and Healthy for Life
This is one of my new favorite dishes! I was never much of a sea food fan or a mushroom lover, but for some reason the combination of all these things together just creates a mouth watering meal. Fish is a healthy food to include in your diet and is something that we strive to consume about a half pound of oily fish such as salmon each week. Oily fish like salmon, sardines, and anchovies are a great source of long chain omega-3 fatty acids that help to balance out omega-6 levels in the tissues of the body. It is a good idea to avoid alcohol when consuming fish because mixing alcohol with polyunsaturated fats can cause peroxidization which can result in highly toxic compounds that can damage DNA and cause atherosclerosis. There is a lot of effort that goes into this meal so the directions are a bit lengthy, but just hang in there because the results are worth it!
The boyfriend and I had the chance to visit my parent’s house this weekend where I knew a 5min drive into the country would bring us to one of my favorite apple orchards I’ve been too.
