Easy Caprese

We all get the desire to have a little something to munch on while cooking dinner. Especially if it's something you prepare then throw into the oven for half an hour or more. Well it doesn't get much easier, delicious, or healthier than a Caprese Salad!
Tomatoes are a great source of lycopene which helps promote bone health and is a great antioxidant. Especially when eaten raw! It's also high in vitamin C and K and is especially good source of vitamin A which should not be taken as a supplement.
INGREDIENTS:
- 1/2 lbs mozzarella
- 1 tomato
- 5-15 basil leaves depending on size and taste desired
METHOD:
- All you need to do is slice fresh mozzarella and tomatoes. Layer them together with fresh basil then sprinkle with salt, pepper, olive oil, and balsamic vinegar to taste.

One of our favorites this time of year! For a lighter flavor, we use white or golden balsamic vinegar. Unfortunately, it won't be long before the end of basil season. Any suggestions on best time/way to start herbs indoors for those of us living in colder climates?
