Sweet Caramelized Butternut Squash
Friday, November 07, 2014Happy Happy Friday!! I've been sitting around nervous all morning not being able to focus because I've been waiting for a phone call about a possible job offering. And...it involves photography! So, of course I ask that you keep your fingers crossed for me please! I am guilty of making plans before I even get offered a job but if I do get offered the job there should be some exciting things on the horizon. Hehehe ;) Sometimes I can be such a girl and just want to be able to spend a little money here and there!
This year for Thanksgiving (can you believe it's right around the corner already!?) is bitter sweet because it will be the first Thanksgiving that we are not with my family nor Adam's family gathering. Although, I am trying to make something positive out of that by planning our "feast" starting after I finish this post. Then I plan on sharing all the dishes of this feast with you all on here afterwards! I know it'll be after Thanksgiving by then but it's never to early to start planning for next year, right!? Okay, well maybe it is but it'll be here for then.
We've mentioned several times the benefits of eating food in season and it's nearing or already is squash season in some areas. So today I have a delicious caramelized butternut squash recipe for you all. Just a little note with this one...I think you could completely take this to the next level by adding in some pecan pieces. I really wanted to but I didn't have any in the house and I didn't feel like running out to the store again! We all know how those days go. Anyways it tastes great this way as well but the pecan way just might add a little something-something and make it a little more visually appealing!
INGREDIENTS:
- 1 butternut squash
- 4 tbsp butter
- 1/4 coconut sugar (or light brown sugar)
- pinch of salt and pepper
METHOD:
- Preheat oven to 400 degrees F.
- Peal the butternut squash, cut off the ends on both sides, and then cut in half the long way and remove the seeds.
- Then cube the butternut squash into ~1 inch pieces.
- Place evenly out on a baking sheet.
- In a small sauce pan heat butter and sugar on low until completely melted and combined. You don't yet want to caramelize it at this stage because you want that to mostly happen in the oven. Make sure to mix pretty constantly throughout this process.
- Add a little salt and pepper and stir one last time.
- Drizzle on the butternut squash and mix them slightly so they are coated evenly.
- Bake in the oven for 35-45 minutes or until squash becomes tender and caramelized.
