Happy Memorial Day all! I hope you are remembering those that have served and are serving while enjoying your long weekend. Hopefully you won't be like me have had to work all weekend long including today.
Sigh! However, at least I get time and a half! ;)
I have a pretty simple dish for you today. Just because it's now summer time doesn't mean that you have to put the crock-pots away. I actually think summer is another excuse to use them! Don't you want to be spending all day outside enjoying the weather while your slow cooker does all the work!?
I have been enjoying the outdoors and the different seasons now that I'm back in the midwest. I hope to be sharing some fun projects with you all that I want to finish while it's nice out along with some delicious summer recipes. I've promised my husband some lemon cheesecake for awhile now so I probably need to get to that very soon! ;)
This balsamic shredded beef is so delish! It has a nice tang to it that pairs perfectly on top of some mashed potatoes or even some fries depending on how you want to eat it. That's the wonderful thing about shredded beef it can be so versatile! You can eat it on sandwiches, cold on salads, on mash potatoes, in a loaded fries type of way, or by itself. I'm making myself hungry just thinking of all the options so I better get to it!

INGREDIENTS:
- 1-2 lbs beef chuck roast
- 1 c beef broth
- 1/4 c balsamic vinegar
- 1/2 c red wine
- 1 tbsp coconut aminos
- 3 cloves garlic
- 2 tbsp honey
- 4 tbsp Worcestershire sauce
- 1 tsp salt
- 1/4 tsp crushed red peppers

I don't know about you, but I just had a long and exhausting weekend. Don't get me wrong, it was fantastic! But that whole springing forward thing really has me outta whack! As some of you may know, Adam, I, and our girl, Zephyr, have recently joined the Michigan Search and Rescue. This past weekend they held a camp from Thursday evening through Sunday afternoon.
To keep the ball rolling on the low carb track, up next is Mushroom Alfredo Spaghetti Squash. This is the epitome of creamy deliciousness -- which I love most! Now, I made it into a mushroom alfredo but don't be afraid to make it into a chicken alfredo or a sausage alfredo, even a spicy sausage alfredo would be pretty good in my mind!
I'm pretty sure that I need to buy a lottery ticket. We've had two snow days in the past week. One today and one last week Thursday and both those days were my days off from work.

I hope you all enjoyed a wonderful Superbowl weekend! I know Adam and I did. I work in retail and somehow I was able to get the entire weekend off! Crazy I know! So, we decided to spend some quality time socializing our dogs, doing some lazy grocery shopping at Horrocks, and, to make Sunday really special, put some mulled wine into a crock pot and snack on goodies all day! Which I'm pretty sure is exactly what 80% of the population was doing that day too -- just drinking and eating!
This no bake tart is a perfect dessert for Valentines Day! It hits all of the dietary categories: paleo, vegan, and gluten free. Not that you would be able to tell with how rich and decadent it is. It is virtually guilt free with a no-bake chocolate crust just sweetened with a little maple syrup filled with a dark chocolate vegan ganache and topped off with just the right amount of raspberry preserves.
Yesterday, my bestie Holly asked me if I had a new blog post and I was like "yeah--it just isn't posted yet." Well, isn't that lame! I came across this recipe a couple weeks ago and just had to make it! I've been completely addicted to soups lately and, more specifically, homemade soups. Potato soup is one that I've been wanting to do for a while. I tried a crockpot version before this one. Unfortunately, while it tasted amazing, the second time I heated it up all of the liquid was absorbed and the soup became the consistency of mashed potatoes!
