Cauliflower Fried "Rice"

Do you know what snow days are good for --- other than playing in the snow with puppies!? Duh --- blogging! I was able to make a couple of delicious dishes on Thursday and now I get to spend today sharing them with you. First up is Cauliflower Fried "Rice." I found this recipe by one of my favorite food bloggers Pinch of Yum on Pinterest and, well, just had to try it.
My hubby has decided to go low carb for awhile while we get our young butts in shape. At least, that's the plan. Because we should be in our physical prime while we are in our mid twenties, right??? That's my opinion anyways because --- heck --- what excuse do we have not to get ripped!?
So, just a heads up, you will definitely see the low carb phase reflected for a little while. It's just no fun to make food and have no one to share it with. I'm not going to make something delicious and say "yummmmm, this is so good" when Adam is not able to eat it and say "yes, that is good."
So, this fried rice, as you may have guessed, does not have any rice in it at all. The cauliflower takes the place of the rice which, surprisingly, worked pretty well. It also allows you to be able to eat so much more of the delicious fried "rice" because there are just not that many calories in veggies! Please eat this to your hearts content --- it also tastes best fresh instead of as leftovers. I hope you EnJoY it as much as we did!
INGREDIENTS:
- 1 head of cauliflower
- 4 tbsp sesame oil
- 1 large carrot
- 3 garlic cloves
- 1 c frozen peas
- 2 eggs
- 3 tbsp coconut aminos "soy" sauce
- 6 green onions
- 1 tsp cumin
- 1 tsp salt
- 1 tsp pepper
METHOD:
- Prep your veggies by using a food processor to finely chop the cauliflower. Dice up the large carrot and green onions, and put the garlic through a garlic press.
- Heat 2 tbsp of the sesame oil in a large skillet over medium-low heat. Add the carrots and garlic and fry until garlic starts to turn golden brown ~ 5 minutes.
- Turn the heat up to medium-high heat and add the cauliflower, peas, the rest of the sesame oil and whatever spices you wish to season with. Fry quickly for only a couple of minutes. You want the cauliflower to be soft but you don't want it to become mushy.
- Turn the heat down and push the stir fry to the sides of the skillet so there is a middle circle of skillet exposed. Add your beaten eggs to the middle and scramble.
- Stir in the green onions and soy sauce at the end.
- Serve right away nice and fresh and hot.

- Optional sauce: mix equal parts -- soy sauce, sesame oil, and honey.
