Yesterday, my bestie Holly asked me if I had a new blog post and I was like "yeah--it just isn't posted yet." Well, isn't that lame! I came across this recipe a couple weeks ago and just had to make it! I've been completely addicted to soups lately and, more specifically, homemade soups. Potato soup is one that I've been wanting to do for a while. I tried a crockpot version before this one. Unfortunately, while it tasted amazing, the second time I heated it up all of the liquid was absorbed and the soup became the consistency of mashed potatoes!

Everyone always says before hand to remember to take it slow...to remember to pause...that the day will go way too fast, and to just absorb as much as possible. How incredibly true that was. For a lack of better words, this day was the best, most beautiful day of my life. It was also the hardest decision I have ever had to make in my life.
Can I start this post off with an "ugh", please!? I seriously am just overcoming the worst cold I have had in a very very long time. My mother says it's what I get for living in Florida and not being sick for over a year! ;)

Thank goodness my mother left us ample amounts of rhubarb to be able to expand upon the normal rhubarb recipes that we usually. This year we got to try something new. This recipe turned out to be soooooo good! Of course we are always big fans of anything that includes cream cheese. Seriously, what more could you ask for in a dessert!?
