Pamela's Gluten Free Pancakes

This is just a short and sweet post about some great gluten free pancakes that Adam and I like to enjoy for any meal of the day! I am lazy when it comes to making them and buy a pre-made flour mix instead of all the individual flours and mixing them together but it is so amazing!!

INGREDIENTS:
  • 2 c Pamela's Baking & Pancake Mix
  • 2 large eggs
  • 1 1/2 c coconut milk or buttermilk or half & half
  • 2 tbsp macadamia oil
  • 1 tsp cinnamon

METHOD:
  1. Mix all ingredients together in a medium bowl.  If you like thin pancakes add a little bit more liquid. 
  2. Make sure to mix well enough that there are no clumps of flour. 
  3. Pour batter into an oiled pan (we use coconut oil) or griddle. 
  4. Heat an oven to the lowest temperature and place pancakes on sheet to keep warm until you've used all the batter. 
  5. Top with butter and sweetener or do as we did and use butter and apple pie filling.
  6. Enjoy! 


Note: if you can't find this in your grocery store use a mix of the items listed below.

Brown Rice Flour, White Rice Flour, Almond Meal, Tapioca Starch, Sweet Rice Flour, Potato Starch, Baking Powder, Baking Soda, Salt
