The Best Mojito Ever!

I have to give my aunt Sue credit for this recipe. The first time I ever had a Mojito was at her house. I was lucky because she has a beehive and a beautiful garden. Therefore 2 of the ingredients came fresh right from her back yard! Which is why I'm sure it tasted amazing! That is the secret too to having it be the best mojito! So, I highly recommend that you use local non-proccessed honey and mint. The best place to find these?? Your local farmer's market of course!
INGREDIENTS:
- 2 oz rum
- 1 tsp honey
- 4 tbsp lime juice
- mint
- sierra mist
METHOD:
- This recipe is for a tall cup as shown in my photos. You may cut it in half for a short cup. To start out put enough mint in the cup to fully cover the bottom and then some, along with a single ice cube, drizzle of honey, and 1 tbsp lime juice.
- Using a wooden pestle works best mash up the ingredients in the cup. If you don't have a wooden one you may use a stone mortar and pestle with a stainless cup then transfer to a glass cup. Such as I did. Otherwise you may use the end of a wooden cook spoon as a substitute for both!
- Once that is done you can drizzle the sides of the cup as I have shown or wait to add a bit more honey to the top.
- Add the rest of the lime juice and the rum with a slice or two of limes. A common mistake that I made in the beginning of making these was adding too much soda...it's supposed to be mostly rum and lime juice with a very little amount of sierra mist.
- Top off the rest of the cup with sierra mist and give it a quick stir.
- Enjoy!!
