Salted Roasted Nuts

Ever since Adam and I decided that we were going to start eat healthy (even before this reset experiment) I've been an avid reader of ingredient lists.  Adam sometimes thinks that I am an overly avid reader of ingredients.  You would be surprised though if you're not an ingredient reader of all these stuff they put into simple foods now-a-days.

For instance, Lawry's is one of my favorite seasonings.  You can use it on a lot of things and just that one seasoning mix alone and it tastes amazing.  I used to think oh its just a pre-mix of spices so you don't have to have 10 different spices to make this one taste.  For the most part that's what it is.  But then they add sugar and cornstarch.  Okay so it's not that big of a deal (unless your doing a 30 day diet reset) but why is that necessary?  I bet it would taste just as good without those things added to it.

So, anyways where I am going with this is I love roasted nuts but we've discovered that the majority of the time they are made out of canola or sunflower oil.  In fact, I've never seen any made with what may be considered a healthy or traditional fat.  Well of course we compromised and then just bought raw unprocessed nuts.  Unfortunately, without roasting they do not taste very good to me.  I like raw pistachios but things like raw cashews were just blah tasting.

Therefore we decided to make some homemade roasted nuts.  Which I found out is one of the easiest things to make ever!  Some things are not worth the trouble to do yourself but these so are.  It's really not that much more time and effort to throw a batch of these in the oven.  I decided to just make a simple recipe to start with.  Just plain ol' salted nuts but the finished product sure isn't plain tasting.  They are amazing and they are just as much fun to photograph as they are to eat!  So I would apologize for all the photos but then again they are easy scroll past. ;)

INGREDIENTS:
  • 3 cups mixed nuts (peanuts are NOT a nut, they are a legume, avoid)
  • 2 heaping tbsp pasture-raised lard (if available)
  • salt to taste
METHOD:
  1. Heat the oven to 400 degrees F.
  2. Use a baking sheet with sides, spread out the mixture of nuts. I used raw almond slivers, raw cashews, and raw pecans.
  3. Toss the chunks of lard onto the sheet.
  4. Sprinkle with salt to taste.
  5. Place the nuts in the oven for a few minutes or until lard has melted.  Then mix the nuts so that they are fully coated in the fat.
  6. Bake for about 15 min or until the lighter toned nuts become golden brown.
  7. Remove from oven and let cool.
  8. Enjoy!
