Mahi Mahi with Mango Salsa

I think it's been long over due that I do another seafood recipe.  This one turned out pretty well and I'm excited to share it with you.  It's also kind of fitting because today I gave my two weeks notice to my current job and this summer I will be moving to Miami, FL!  Where I'm sure there will be a plethora of fresh seafood to be enjoyed!

I have to be honest I never really saw myself as someone who would move to a place like Miami.  I'm like the complete opposite…I like nature (not cities) and cold (not heat and humidity).  Despite that though sometimes the most unexpected things in life turn out to be the greatest opportunities.  I'm excited and nervous but from what I've heard there should be a whole lot of variety in terms of food and recipes that I will learn about and try!

This Mahi Mahi recipe starts with a semi spicy marinade but it gets evened out nicely when topped with a sweet mango salsa.  As well as having a nice mild side of some creamy rice it turns out to be a nice little meal.  You can either use fresh Mahi Mahi or you can use frozen (without having to thaw it first).

INGREDIENTS:
  • 2-4 mahi mahi fillets
  • 1 mango
  • 1 1/2 tbsp coconut aminos soy sauce
  • 2 tbsp olive oil
  • 2 tsp lemon juice
  • 2 garlic cloves
  • 1 tsp red pepper flakes
  • 1 tsp ginger root (fresh)
  • 5 green onions
  • salt & pepper to taste
  • 1 tbsp sugar
  • 1 tbsp butter
  • creamy parsley rice


METHOD:
  1. Chop up garlic cloves and green onions.  As well as grate about a teaspoon of fresh ginger root.
  2. In a dish large enough to hold the fish fillets combine soy sauce, olive oil, lemon juice, chopped garlic, red pepper flakes, grated ginger root, chopped onions, and salt & pepper.
  3. Mix until well combined then add the Mahi Mahi (fresh or frozen) and as best as possible coat with the marinade.
  4. Cover and refrigerate for about an hour.
  5. Heat the oven to broil.
  6. Place the Mahi Mahi in the oven bake for about 10-15 minutes if fresh and 30-40 minutes if frozen.
  7. Start making the creamy parsley rice if desired.
  8. Cut up mango into small cubes.
  9. When the fish is about done on medium heat, melt the butter and sugar in a pan on the stove.  Once heated and sugar is mostly dissolved add mango.  Cook for a few minutes until mango becomes warm and soft.
  10. Serve everything together.
  11. Enjoy!
