HaPpY BiRtHdAy to MoM, HaPpY BiRtHdAy to MoM, HaPpY BiRtHdAy dear…. It's my mom's birthday!!! She may think she's another year older but in my mind she's another year younger! ;) It's not a birthday without a birthday cake. When I asked my mom what she wanted she said a chocolate cake that's fluffy. I took that to mean that she pretty much wanted a regular chocolate cake but of course gluten-free and boy did I deliver! The taste of this cake is no different I swear. If you sampled it on the street you'd have no idea it was gluten-free I kid you not. Even my dad said he couldn't tell!
Alright all, so here I am super excited! For some reason when I have completely spontaneous blog posts I feel that those are the ones that turn out the best. I woke up this morning and I was like wow I really need to do a post. It's Friday already and I've only done one so far this week (which is just not okay!). So, being morning, being hungry, being in the mood for eggs but not scrambled eggs, and with a little guidance from Pinterest I came up with poached eggs on hash browns.
This homemade ice cream recipe was a must. It was Sunday afternoon and it was very very hot and muggy like it has been for what feels like forever now. I also live in one of those homes where the parents like to save money and never turn on the AC! ;) I came across this recipe on Facebook and immediately was like, "oh I have to click on this and see what it entails." Well since I'm posting it...I certainly didn't mind any of the ingredients! Also, it's one of those ice cream recipes where you don't need an ice cream maker or have to shake it in a ball all day long.
Well Adam just walked in the door and I've been home for about an hour now logged into my computer and I still didn't even have a single word written for this post. Guess I'm just feeling quiet inside and I'm finding Facebook to be overly distracting today. Usually it doesn't get too much attention from me anymore but I liked what I saw today.
Well would ya listen to that? Shhhhhhhhhh It's quiet… only the tv and a lawn mower in the background, everything else is quiet. That's a rarity since I've been back home living with the familia! The girls have gone to the library and as for mom and dad...well who knows but they disappeared somewhere as well. It's just me and the dog for a few precious minutes! So, I better type fast! ;)
I have been wanting to do this post F-O-R-E-V-E-R!! Like, you guys have no idea. I have been longing to do something with sun dried tomatoes just because I think they are going to be my new fetish along with a cold rice or pasta salad. I have such a bad thing for sun dried tomatoes that I thought it'd be fun for me to make them myself! Only to find out that they have to be in the oven for like oodles of hours…and I just can't commit myself to that right now.
