HaPpY NeW YeAr!!!! Yes I am goofy and like to alternate between upper case and lower case, but what else is new!? Besides the new year, I've got a new recipe. I am pretty excited about it as well because it's an original recipe and I don't do too many of those. Mostly I like to share and sometimes modify other recipes that I think are healthy but delicious!!
I have a horrible tendency to love the cooking, photography, and photo editing part of blogging but then always procrastinate when it comes to the writing of the post. That's not to say that I don't like sharing my recipes because that's my ultimate goal in all of this. I really, really, really want to share great deliciousness with all of you.

Can I also say how excited I am for this year!? My best friend Holly is getting married in May and I will be starting to plan my own wedding for 2016. We live in Florida which for the winter months I don't mind too much other than it's unusually warm for this time of the year. Sigh, I do wish the highs were only in the low 70's. I am super excited for tomorrow though because we got some cash for some Christmas presents and we are going to use it to go Kayaking!! It has been my goal since my dad surprised us with a spring break trip to the FL Keys to see a Manatee. Now I live here and I still haven't seen one. I hope tomorrow will bring good us chances.

I really hope all you healthy, gluten-free, paleo, whatever category you fall under people like this pizza crust. We've been experimenting a lot with pan de bono, which is basically a colombian cheese bread. It took us a while to perfect it but now that we have we thought it would also make a great pizza crust. We were right!

-- Yes you should notice how my use of "Exclamation Marks!" keep increasing in number! ;] -- Anyways, I am sharing the pizza crust with all you first and the pan de bono recipes -- yes plural! -- will be coming soon. Especially the one with melted guava in the middle that my mother is dying to get her hands on! Hehe.
INGREDIENTS:
- 1 1/2 c tapioca flour -- yuca flour --
- 1/4 c feta cheese
- 3/4 c queso fresco
- 1 tsp baking powder
- 1 egg
- 1 dash of salt
- heavy cream
note: you may substitute queso fresco cheese for mozzarella cheese and heavy cream for coconut milk but like I said I've been playing with the recipe for weeks and these ingredients produce the best, most stable turn out. For the crust it does not matter as much though so those substitutions would still produce great results.
METHOD:
- Preheat oven to 400 degrees F.
- Using a food processor take the shredding blade and shred your feta and fresco cheeses.
- Place those in a small bowl to the side.
- Using your blending blade add tapioca flour, baking powder, and dash of salt. Pulse a few times to blend.
- Add in your cheese a blend until completely mixed.
- Add in your egg and blend until completely mixed. At this point you should start to notice it become a bit sticky but not completely stuck together.
- This next part is the tricky part. Using the heavy cream add about a tbsp at a time to the food processor. Mix well after each addition and I mean really well. -- sometimes it doesn't look like it's going to get smooth, but then after you wait for 15 more seconds it does turn smooth -- What you are looking for is you want to bring it to the point where it just starts to get smooth. It usually only take 2-4 tbsp. Just one tbsp over though will result in it becoming a giant puddle once put into the oven. So, it's better to be a little dry than too wet. Reference my pictures for texture.
- Once it's at the right consistency roll into a ball.
- Place this ball between two sheets of plastic wrap or wax paper for easiest handling.
- Roll out until it's pretty thin, around and 1/8" thick and fits on your pizza pan.
- Bake in the oven for 12 - 16 minutes or until it just starts to become golden brown on top.
- At this time prepare your pizza toppings.
- Remove from oven and top with whatever you desire.
- Place back in the oven long enough for the cheese to melt.
