Sugared Pecan Balls - GF

These things are mighty amazing if I do say so myself. It's got butter, -- one of my favorites if you haven't figured that out by now ;] -- pecans, and a bit of gluten-free flour mixture. Plus they are rolled in confectioners' sugar for the final step. I don't know how something could sound much better. They seemed to make good Christmas presents too. Lucky for me since I was going for the homemade touch type gifts this year.
I gave them out to a few people and as a result one person gave me multiple hugs, multiple days in a row! I think that means they liked them.

The other person sent me a photo of her pairing them with her morning coffee. Saying how it was a great way to start off her Christmas break. If you still have a sweet tooth after all these holiday festivities now is the time to make these babies. You need to pack it in before those New Year resolutions, right!?
I've got so, so many preparation photos for this blog post so you'll just have to bear with me. Which just a little fun fact I just had to look up which type of bear to use in that sentence. I learned that it's like the animal bear (from the world forbearance) otherwise if I had use the word 'bare' it would mean "join me in taking my clothes off".
Hah! Now I may be an open person, but I'm that open! ;]
INGREDIENTS:
- 2 c all-purpose gluten-free flour
- 2 c pecans
- 1 c butter
- 1 c confectioners' sugar
- 1 tsp almond extract
- 1 tsp salt
METHOD:
- Pre-heat oven to 350 degrees F. Remove butter from fridge to warm to room temperature.
- Spread the pecans on a baking sheet and let them toast in the oven for about 6-8 minutes. Tossing once or twice during this time.
- Remove from oven and let cool for 5 minutes before placing them in a food processor.
- Grind until finely ground.
- Using a large bowl, fold in ground pecans with flour and salt.
- Using an electric mixer or just by hand, mix together butter and 1/4 c confectioners' sugar.
- Add almond extract and mix a bit more.
- Then add flour mixture and mix-in until just combined. -- Making sure, though, that it is fully combined.
- Using your hands shape into roughly 1" rounds.
- Place a baking sheets and bake until they just start to turn golden brown -- 12 to 14 minutes.
- Remove from oven and let cool 5 minutes before transferring to wire rack to cool completely.
- Once cooled completely -- that part is important -- good things come to those who wait ;} -- place the remaining sugar on a plate and roll the cookies until as evenly coated as you can get it.
