Can I just say that I have missed you guys so much!?  My computer has been out of commission for almost 2 weeks now.  2 whole weeks where I haven't been able to blog!  Last night we had a 9:45 pm appointment at Apple. Yes, that's how late the appointment was for real.  They decided since they don't know what the heck is going on that they are going to send my computer into Apple and once it comes back it is going to be guaranteed to work!

Pretty sure they are basically just going to give me a new computer because who knows what the problem is! Anyways I only have to wait 5-7 more days and then I should have a "guaranteed" operating computer!  I can't wait!!  In the mean time I have commandeered Adam's work computer to be able to do this blog post. Shhhhhhhhhh!  So, while I might not be able to get back to 2-3 post a week yet I can get you this one!

I know "Up North" that it is finally thawing out a little and you've got summer on your minds.  I also know that down here in Florida it is full blown summer but that doesn't mean that with the cool evenings still up North that you still don't want to enjoy some delicious tomato basil soup!  This would pair greatly with some gluten-free grilled cheese of course but unfortunately for me I still haven't mastered the gluten-free homemade bread!  I'm working on it!?

Although if you do follow my blog regularly you do know that I have mastered the gluten-free pizza crust and we are still obsessed with it!  We had pizza three times within a 5 day period!  2 for dinner and 1 breakfast pizza.  =]

Back to the soup though, this is always the way to go when having tomato soup.  You just have to have basil in it.  Doing so just adds that special something - something.  I had fun with this recipe as well because I was able to put Adam to work helping me and we learned how to remove seeds from tomatoes.  It's totally simple, but I totally didn't know how to do it!

INGREDIENTS:
  • 10 Roma tomatoes or equivalent of other tomatoes you love
  • 28 oz can crushed tomatoes
  • 1/4 c sun-dried tomatoes
  • 4 c chicken broth (1 box)
  • 1 1/2 c fresh basil
  • 1/2 c cream cheese 
  • 1 yellow or white onion
  • 2 tbsp extra virgin olive oil
  • 4 garlic cloves
  • 1 tsp crushed red pepper
  • salt and pepper

METHOD:
  1. Preheat oven to 350 degrees F.
  2. De-seed your tomatoes.  You can do this by minimally cutting the 2 ends of the tomatoes off, then place on its side and cut the tomato in half making sure you are going though the ends you just cut. At this point just squeeze the tomato into a bowl and scrap out any remaining seeds with your finger if there are any. 
  3. Place spread out on a baking sheet and and sprinkle with 1 tbsp extra virgin olive oil and salt to liking. 
  4. Roast tomatoes for 40 minutes.
  5. Using a large 6-quart pot, add 1 tbsp extra virgin olive oil, chopped onion and crushed red pepper sauteing over medium heat until onions are translucent. 
  6. Then add 4 crushed garlic cloves, 28 oz can of crushed tomatoes, sun-dried tomatoes, and chicken broth. 
  7. Bring to a boil, then add the oven roasted tomatoes and let simmer for an additional 10 minutes or until your grilled cheese or rest of meal is almost ready.
  8. Add the basil and cream cheese and stir until cream cheese is completely melted. 
  9. Place soup in a blender (we want a glass one!... wedding registry!? ;)) and blend until smooth.
  10. Serve immediately afterwards while still hot!

  1. Wow, that's a very long time for it to be out of commission. They must be having a hard time figuring out the problem themselves. In any case, no worries. I'm sure they’re gonna get back to you any time now, or at least help you recover your files, should you need to replace it.
