GF Strawberry-Rhubarb Pie
Thursday, June 04, 2015We've moved!! I can't believe everything that is happening in life right now. It started with my computer crashing and then everything went crazy! We moved to Michigan. I am soooo glad to be back in the midwest. Some days it feels like we never left. Also, I am happy to finally be able to announce that we are getting married in only 65 days! A small intimate ceremony on a mountain top!
Additionally....
We adopted a new puppy and boy is she a bundle of energy. Just in case we needed any more reason to get pumped up about things!

The house we moved into in Michigan is amazing! It has beautifully redone hardwood flooring, white modern kitchen cabinets, and lots of natural sun light. Not to mention it's a 4 bedroom! Holy cow! Which is a big difference from a tiny "2 bedroom" apartment. It's allowing us to have one of the bedrooms as a closet, another as an office, and yet another for a guest bedroom. Although, currently it houses my wedding dress. So no boys allowed! We also have a basement and it has one of those sturdy work benches with the super heavy clamp thing.

It also has a really, really old cement double laundry sink which is pretty cool. I just don't even know what to do with all this space! Oh and we have a garage too! Which by the way you must know your becoming an adult when you get excited about things like your garbage bin being delivered so you no longer have to store garbage bags in your garage. Yay!
The house is in pretty good shape. Meaning there won't be as many DIY projects but I've still got a couple up my sleeve that should really make this place shine! I can't wait to share some of them on here for all of you. The yard on the other hand does need a lot of work so that'll be fun working on some curb appeal and then of course catering to my needs of having a veggie garden. Plus I'd rather work outside anyways! I'll make sure to share those project pictures with you guys as well. You'll have to help me seeing as my gardening experience comes down to planting herbs in a railing hanging planter on a balcony.

We've got to talk about this pie. Like seriously why I haven't I don't this recipe sooner for you guys. This pie has to be pretty much my favorite of all pies! It just has the right mix of sweet and sour and all that ooey, gooey pie goodness that goes along with it. Additionally, I used a good old hard cover cookbook for the recipe. No internet searches or pinterest finds. Just a good ol' cookbook! So, its guaranteed to be a good ol' traditional pie.
INGREDIENTS:
- 2 crust GF pie pastry
- 4 c chopped rhubarb
- 2 c halved strawberries
- 1/2 c Truvia baking blend or 1 c regular sugar
- 2 tbsp butter
- 1 pkg gelatin
- Prepare the pie pastry crust though the chilling process.
- Preheat oven to 375 degrees F.
- In large bowl combine gelatin and Truvia.
- Add strawberries and rhubarb tossing lightly with spoon or spatula to combine.
- Using the larger ball of dough roll it out between 2 sheets of wax paper.
- Gently transfer to line 9-inch pie dish.
- Spoon strawberry and rhubarb mixture onto the pie crust.
- Place dots of butter onto fruit mixture.
- Roll out the smaller ball of dough using the same method.
- Gently transfer on top of fruit mixture and finish by merging the top and bottom crust with a decorative edge.
- Making sure to place a baking sheet underneath the pie to catch any drippings bake for 45-60 minutes.
- Cool for an hour to serve it warm.
