Beef & Lamb Meatloaf Muffins
Tuesday, November 19, 2013I thought this was an excellent idea! I already had all of the ingredients. I also had some ground lamb. I don't care for it much by itself but I know that it's a really healthy meat to eat so I decided it'd be a good experiment to mix it in and see how it turned out. I can tell you that it turned out well or I would not be posting it!
INGREDIENTS:
- 3/4 lbs ground beef
- 1/2 lbs ground lamb
- 1 medium onion
- 2 garlic cloves
- 1-2 banana peppers
- 3 mushrooms
- 1 egg
- 1 tsp Lawry's Seasoned Salt
- 1/4 tsp cayenne pepper
- salt
- pepper
- 1 tbsp dried chives
- 1 tbsp dried parsley
- 2 tbsp tomato salsa
- 1 tbsp worcestershire sauce
- 1/2 c ketchup (non- high fructose corn syrup kind)
METHOD:
- Preheat oven to 450 degrees.
- Chop up onion, garlic, banana peppers, and mushrooms.
- In a medium bowl put all of the ingredients except the meat. Mix together well until egg is well whipped and everything is evenly mixed in.
- Add the meats and with your hands knead everything in.
- Take your muffin pan and start with small handful sized clumps into each spot. Then whats left evenly distribute to make each meatloaf muffin as even as possible.
- After that put some ketchup (classical choice) on top of each one to cover kind of like frosting. (Adam put some Sriracha sauce on top of his and loved it.)
- Bake for about 20 minutes.
- Because there is not anything like bread crumbs added there will be a lot of oils that will release as it cooks. When it's done it may even seem like it's swimming in it. But it's OK... they are GOOD for you!! If you don't like the idea of drizzling some of the oils back onto the meatloaf then add it to your sides. For example it would taste great mixed into some mashed potatoes or over some steamed green beans. With that note....Enjoy your delicious meal!
