Easy Guacamole
Thursday, August 28, 2014So, here we are trying another one of Adam's ideas. This time it's a low carb, ketogenic diet to try and alleviate any overgrowth of bad bacteria in my intestines. We are trying this because fermented foods like kefir and kombucha cause me a little stress when consumed right now instead of being beneficial. Sounds yummy right!? Anyways the point to all this is that avocados have become a new favorite fatty food of mine. Therefore, today I have an easy guacamole recipe to share with all of you!
Making guacamole brings very sweet memories of mine to light. My mom LOVES making guacamole and I remember for a while where (before we were gluten-free) we would make it almost every other night and eat it with those lime flavored tortilla chips! Never fear...just because you can't use chips anymore to go dipping you by all means can still eat it! I love guacamole on anything like tacos or fajitas. I even make it for a little pre-dinner appetizer sometimes but use carrots and cucumbers instead for dipping. =] I must warn you too that my next post might also use avocados because Adam recently showed me a recipe using them in deviled eggs and I so want to try it!!
INGREDIENTS:
- 1 avocado
- 1 lime
- 1 lemon slice (optional)
- 1/3 c tomato
- 1/4 c red onion
- 1/2 tsp fresh garlic
- 1 tsp fresh cilantro
- 1/2 tsp fresh tarragon (optional)
- salt & pepper to taste
METHOD:
- I like to make my guacamole as more of a chunky version. To do this first slice the avocado open the long way and take out the pit. Then slice a checker board pattern into the avocado with enough pressure the slice through all the avocado but not enough pressure to slice through the skin. Scoop out with a spoon into a small bowl and remove any brown spots there may be.
- Chop up part of the tomato, red onion, garlic, cilantro, and tarragon until you have the proper measurements.
- Add these to the bowl with of avocado and gently stir.
- Slice the lime in half and squeeze just one half to begin with into the mixture as well as a slice of lemon.
- Add the garlic and gently mix again.
- This is the time where you have to do a little taste testing and decide if it needs more lime or lemon juice, cilantro, salt, and pepper.
- Once you have it to your taste buds satisfaction it is ready to serve!
