Guacamole Stuffed Eggs

Of course when your momentarily unemployed you can get a lot done during the day. ;) I was able to make some homemade mayo which I think turned out to be my best batch yet! Of course I always say that but maybe it just keeps getting better and better!! Then I was able to get this new recipe done as well. As I promised, it involves more avocados.
I think this recipe adds a great twist to the traditional deviled eggs. Don't get me wrong those are amazing as well but everyone can make regular deviled eggs. You could even use these at say a theme party like... green eggs and ham!? Okay well I don't know of anyone that has had one of those but maybe for a birthday party for a kid that loves Dr. Seuss!
Speaking of crazy events like birthday parties has anyone ever been to an Ikea!? Well Adam and I made our first trip to one of those stores last weekend and OMG it was like paradise to me but so CrAzY!! Not only were we at Ikea for the first time but it was also Labor Day (1st mistake) and the grand opening weekend for this location (2nd mistake, although we didn't know this before we went!)! So totally and completely insane but it sure did leave a lasting impression! Now that I've gotten my gushing of wanting an all Ikea home we can get back to the important stuff. =}
INGREDIENTS:
- 6 eggs
- 1 avocado (the riper the better)
- 1 lime
- 1/4 tsp onion powder
- 1/2 tsp garlic powder
- 1 tbsp homemade mayo (optional)
- paprika to taste
- salt and pepper to taste
METHOD:
- Boil your eggs as you normally would to make hard boiled eggs. Whether that's by putting them in a pot of water and once boiling set the timer for 10 minuets and letting them boil. Or bringing the eggs to a boil and then turning the heat and letting them cook for 12 minuets.
- Run cold water over the eggs once done to stop the cooking process and the help them cool.
- Once cool enough to handle peel the eggs. (By all means keep the egg shells for your garden!)
- Once peeled cut the eggs the long way (hot dog style).
- Remove the egg yokes and place 4 of them in the medium bowl you will be using to combine ingredients. You may toss the other 2 or just eat them!
- Add the avocado, juice of the lime, onion powder, garlic powder, and homemade mayo. Mix/crush with a fork until well mixed. If you don't use mayo you may find that it might need some more moisture like more lime juice.
- At the point taste and add the appropriate amount of salt and pepper for your taste buds.
- Scoop into the egg whites!
- I love Paprika on foods like this so if that's your fancy as well sprinkle some on top.
