Pizza Style Stuffed Bell Peppers!

Hey Everybody! Adam here…I guess that means it is my turn to write the blog post. I feel a little dishonest writing this post because Nicole took such nice photos for this recipe. She also did a great job doing the actual cooking of the food. The only thing that I did was beg for stuffed peppers, and then eat them. I guess doing this for her was the least that I could do.
I love bell peppers, I love spicy peppers, and in reality I love all things pepper-related. I had been begging Nicole quite a while to have stuffed green peppers but she didn't seem as keen on the idea as I was. However, we were at the grocery store at the butcher's counter while discussing this idea again and she got the idea to use italian sausage instead of ground beef. This also lead to her idea to make a pizza-esque stuffed pepper. To me, this wasn't settling for a different recipe but was an evolution of one that I already loved. I was ecstatic. She also had the idea of using a fresh ball of mozzarella for this recipe and while I thought it sounded delicious I had my doubts. I didn't think the mozzarella would fair well in the oven nor did I think it would melt nicely on the peppers. In what seems to be a common pattern for Nicole's ideas...I learned that I was wrong, again. Nevertheless, I was glad to be wrong because it worked out perfectly and was definitely a delicious meal.

INGREDIENTS:
- 3/4 lb Italian Sausage
- 4 Bell Peppers, Pick whatever colors you fancy
- 1/2 Yellow Onion
- 2 Cloves of Garlic
- 4 Mushrooms
- 1 Small Can of Pre-sliced Black Olives
- 3/4 C Pizza Sauce
- 1 Mozzarella Ball
- Crushed Red Peppers
- Dried Basil, Parsley and Fennel
- Sea Salt and Black Pepper
- 2 Tbsp. Kerrygold Butter
METHOD:
- Preheat Oven to 375 degrees
- Place a medium sized sauce pan onto the stove and add the butter to the pan, begin heating on medium-low heat...Don't let the butter smoke, if if it does turn the heat down.
- While butter is melting, dice the onion with a knife
- Once the butter is melted, add the diced onion to the pan and begin cooking. Stir frequently.
- Dice and chop the Garlic
- Once the onions begin to look translucent, add the garlic to the pan. Continue stirring frequently.
- After a minute or two of cooking the garlic, add the italian sausage, crushed red peppers, mushrooms, salt and black pepper to the pan.
- Continue to cook on the pan until the meat is brown.
- Add the black olives, pizza sauce, basil, parsley and fennel to the pan and stir until everything is mixed evenly.
- Slice off the tops of the Bell Peppers.
- Evenly divide the cooked mixture and scoop into the peppers until filled.
- Place a slice of mozzarella on top of the bell pepper.
- Place the peppers into a baking pan or baking dish and place into the oven for 35-45 minutes or until the pepper is tender and ready to eat.
