Adam and I have only been to cuban food restaurants twice so far, but already I know that two staples on their menus are yuca and pork. Seeing as the official day of fall was a few days ago as well, what better than a crock pot recipe to start off the season that you can also call a cuban dish! We found a pork roast at Fresh Market on sale for $3.99/lb! (Which is a really cheap price for any meat by the pound.) You can also feel free to use a pork shoulder or a pork butt. Oh, and by the way.... I think pulled pork can also be great for football season!! So see!? This dish is just perfect in every way right now. ;]
I don't even remember where I came across this recipe but it doesn't even matter because once I made these nothing else mattered! They were that good! I was extremely skeptical because I've never had that much luck at making chips/crackers. The original recipe comes from this blog here and I don't make it any differently besides using different herbs. As you'll find out though you can use any herbs that you enjoy.

Chocolate Chip & Pecan Banana Bread - GF
Thursday, September 18, 2014If you guys read my last post you know that I had quite the time trying to make this banana bread! I guess all things happen for a reason and it was for the best that it didn't turn out the first time. This time I was able to add a couple of ingredients that I didn't have on hand last time (and that I forgot to pick up) that I think just made it 10 times better!
Last week was just terrible for my food blog! I started on Tuesday fully intending to get back into the grove of twice-a-week postings. I was making banana bread which for some reason I had been wanting forever! I was even almost done making it and I got to the point where you have to cook it in the oven for about 40 minutes and within 15 it was burnt to a crisp while still being completely raw inside. I cried. Seriously! Not because I couldn't do the blog but because I knew I wouldn't be eating banana bread that day!
Today was a productive day for me! Of course when your momentarily unemployed you can get a lot done during the day. ;) I was able to make some homemade mayo which I think turned out to be my best batch yet! Of course I always say that but maybe it just keeps getting better and better!! Then I was able to get this new recipe done as well. As I promised, it involves more avocados.
