Paleo Pulled Pork on Mashed Yuca

Adam and I have only been to cuban food restaurants twice so far, but already I know that two staples on their menus are yuca and pork.  Seeing as the official day of fall was a few days ago as well, what better than a crock pot recipe to start off the season that you can also call a cuban dish!  We found a pork roast at Fresh Market on sale for $3.99/lb!  (Which is a really cheap price for any meat by the pound.)  You can also feel free to use a pork shoulder or a pork butt.  Oh, and by the way.... I think pulled pork can also be great for football season!!  So see!?  This dish is just perfect in every way right now.  ;]

On a side note, I don't know about everyone else but I'm so excited that it's Thursday, September 25th because it's the start of #TGIT (thank god it's thursday)!  Aka the first Thursday of the start of Shonda Rhimes' three shows in a row.  I so can't wait to watch the season premiere of How To Get Away With Murder either because it looks so gooooood!  Almost as good as this pulled pork dish looks.  ;]

INGREDIENTS:

Pulled Pork:
  • 2 1/2 lbs pork roast, pork shoulder, or pork butt
  • 1/2 large onion
  • 1 handful mushrooms
  • 1 can roasted chopped tomatoes
  • 1 c apple cider vinegar
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp smokey paprika (my favorite seasoning!)
  • 1/2 tsp cayenne
  • 1 1/2 tsp salt
  • pepper to taste
Mashed Yuca:
  • 1 yuca
  • 4 tbsp butter
  • 1 c cream
  • 1 tsp garlic powder
  • salt and pepper to taste





















METHOD:
  1. In the morning before work mix all of the seasonings together in a small dish.  Then rub the mix into the pork. 
  2. Place the pork into the crock pot.
  3. Chop the onion and mushrooms and add to the crock pot along with the can of tomatoes and cup of apple cider vinegar. 
  4. Set on low and let sit for 6-8 hours. 
  5. About 45 minutes before you are ready to serve pull any pork apart that hasn't already separated but leave in the crock pot on low. 
  6. To make the yuca you are going to peal all the waxy, brown/pink layers off.
  7. Cut the ends off then cut into 1/2" cubes.
  8. Place in a pan on the stove.  Bring to a boil.  Once boiling set the timer and let boil for 30 minutes or until its really soft when poking with a fork. 
  9. Drain and then go through each piece and the pieces that have a stringing hard middle peal that off and place back into the pan. 
  10. Once they are all back in the pan on low heat add butter, cream, garlic powder, and salt and pepper.  
  11. Mash until nice and creamy.  It will be more chunky than normal mashed potatoes but should be similar in consistency.  Feel free to add more butter or cream if you need more liquid. 
  12. Place a bed of mashed yuca on your plate followed by your pulled pork.
