Hey Everybody! Adam here…I guess that means it is my turn to write the blog post. I feel a little dishonest writing this post because Nicole took such nice photos for this recipe. She also did a great job doing the actual cooking of the food. The only thing that I did was beg for stuffed peppers, and then eat them. I guess doing this for her was the least that I could do.
It's just been one of those weeks where you seem to be putting all this effort and work into things but it still feels like you are getting nothing done. We've all had those weeks and if you haven't then you are one lucky duck.
Just because we don't eat gluten doesn't mean that we still can't have sandwich type foods. Sandwiches are so easy to have for lunch or dinner and some people eat them daily. In most cases you can simply replace the bread with some lettuce.
The pizza is a special of mine! I used to make it with all gluten included, but now I've had to change some of the ingredients to suit our life style better. It still taste just as good though! The first time I ate this was in high school when a bunch of my friends ordered some. I thought it was so good even though I was very skeptical at hearing about this.
Ahhh, fall is in the air of our small mid-western town. With cooler temps and rainy days in the forecast, it seems like the perfect time to make use of some of our CSA favorites: leeks, delicata squash and broccoli. Combined in a light soup, these farm fresh faves are the hit of any rainy day menu.
This is just a short and sweet post about some great gluten free pancakes that Adam and I like to enjoy for any meal of the day! I am lazy when it comes to making them and buy a pre-made flour mix instead of all the individual flours and mixing them together but it is so amazing!!
I have to give my aunt Sue credit for this recipe. The first time I ever had a Mojito was at her house. I was lucky because she has a beehive and a beautiful garden. Therefore 2 of the ingredients came fresh right from her back yard! Which is why I'm sure it tasted amazing! That is the secret too to having it be the best mojito! So, I highly recommend that you use local non-proccessed honey and mint. The best place to find these?? Your local farmer's market of course!
One of Adam's favorite desserts is cheesecake, and he's obsessed with all things citrusy as well! So, I made the ultimate dessert of gluten free double lemon cheesecake. This was my first time ever making a cheesecake and I am very proud of how well it all turned out!
This is one of my new favorite dishes! I was never much of a sea food fan or a mushroom lover, but for some reason the combination of all these things together just creates a mouth watering meal. Fish is a healthy food to include in your diet and is something that we strive to consume about a half pound of oily fish such as salmon each week. Oily fish like salmon, sardines, and anchovies are a great source of long chain omega-3 fatty acids that help to balance out omega-6 levels in the tissues of the body. It is a good idea to avoid alcohol when consuming fish because mixing alcohol with polyunsaturated fats can cause peroxidization which can result in highly toxic compounds that can damage DNA and cause atherosclerosis. There is a lot of effort that goes into this meal so the directions are a bit lengthy, but just hang in there because the results are worth it!
We all get the desire to have a little something to munch on while cooking dinner. Especially if it's something you prepare then throw into the oven for half an hour or more. Well it doesn't get much easier, delicious, or healthier than a Caprese Salad!
I did eventually find one with gelatin and I had very high hopes for it but the first batch I made I had to throw out because it never thickened and it smelled very burnt. Well I’m writing this post, which means that I eventually figured it out! Without further ado here it is:
Lately, we have been trying more and more traditional Irish dishes at home and when out to eat. One dish that I have fallen in love with is Shepard's Pie. It is a fairly simple recipe that has room for variability and play. Traditionally, it is ground beef with spices, peas, carrots and onions that is topped with mashed potatoes. You then bake it again to brown the mashed potato topping.
Here is our take on this classic dish. We only use two pans in this recipe so there is a very easy cleanup afterwards as well ;)

The boyfriend and I had the chance to visit my parent’s house this weekend where I knew a 5min drive into the country would bring us to one of my favorite apple orchards I’ve been too.
